The kitchen

Cooked like it's for family.

Cayo cooking is Belize at the table: Maya corn, Creole stews, Garifuna coconut, habanero heat that always asks first. Our kitchen works from the San Ignacio market and the village's gardens — which is why the menu changes with the morning, and why dinner is worth deciding on early.

A small ritual our guests love: at breakfast, we share the evening's menu. Tell us you'll be dining in, and the table by the water is yours when the lanterns come on.
